چکیده

ماهیان قزل آلای رنگین کمان وارداتی به دلیل اجرای برنامه های اصلاح نژادی از رشد و کیفیت بهتری نسبت به قزل آلای رنگین کمان تکثیر شده در ایران دارند. در پژوهش حاضر، کیفیت گوشت و مقاومت به استرس های محیطی در ماهی قزل آلای رنگین کمان وارداتی اسپانیایی و ایرانی در دو منبع آبی چشمه و رودخانه مورد بررسی قرار گرفت. بدین منظور تعداد 432 قطعه از هر نژاد قزل آلای اسپانیایی وارداتی و ایرانی در دو منبع آبی چشمه و رودخانه در قالب 4 تیمار و سه تکرار در 12 قطعه استخر به مدت 90 پرورش داده شده دادند و در پایان دوره پرورش کیفیت گوشت تعدادی از ماهیان هر تیمار با آنالیز تقریبی مورد آزمایش قرار گرفت. سپس برای انجام هر آزمایش استرس، تعداد 20 قطعه ماهی به صورت تصادفی از هر تیمار در معرض استرس های حاد دمایی و pH اسیدی و قلیایی قرار گرفتند. نتایج نشان داد که درصد پروتئین لاشه و چربی در تیمارهای قزل آلای اسپانیایی و ایرانی در هر دو منبع آب رودخانه و چشمه تفاوت معناداری نداشت. بالاترین میزان پروتئین در قزل آلای ایرانی و اسپانیایی در تیمار با منبع آب رودخانه مشاهده شد. همچنین نتایج نشان داد که درصد بازماندگی قزل آلای اسپانیایی در دو منبع آب چشمه و رودخانه در مواجهه با استرس های دمایی، pH اسیدی و pH قلیایی به طور معنی داری از قزل آلای ایرانی با دو منبع آب چشمه و رودخانه بیشتر بود (P<0.05). در مجموع نتایج این تحقیق نشان داد که قزل‌آلای رنگین‌کمان اسپانیایی مقاومت بیشتری نسبت به استرس های محیطی نسبت به قزل آلای ایرانی داشته که احتمالاً به دلیل اجرای برنامه های اصـلاح‌ نـژادی روی این گونه بوده است.
